Anyone have a homemade recipe for yellow mustard?
« on: January 22, 2007, 11:18:31 AM »
I got one off a website, and it was soooooo hot I couldn't eat it, and I like hot things.  No way will my kids go for it.  It needs to look and taste like the storebought if possible.  Thanks
Home, home on the range, where the deer and the cantaloupe play..... according to my 4 year old

I made one out of Noursing Tradtions and it was SO hot.  :o I wanted to fix it... it's just sitting in my fridge. Anyone have any luck with that recipe?

Just wondering if anyone has used the N.T. mustard recipe and changed
it so it isn't so hot. Is mustard powder just ground mustard seed?
So, if its not fermented like N.T., homemade would be better than
storebought in any case. Anyone have a successful mustard recipe?
Or a honey-mustard recipe. I've tried recipes for years and nothing ever
is good/usually too hot.

from Allrecipes: "American-style prepared mustard is a mild mixture made from the less-pungent white seed flavored with sugar, vinegar and turmeric (which makes it yellow). European and Chinese prepared mustards are made from brown seeds and are much zestier and more flavorful. (read HOT!) The French are famous for their tangy DIJON MUSTARD, made with brown or black seeds. The German prepared mustards can range from very hot to sweet and mild. Chinese mustards are usually the hottest and most pungent of the prepared mustards."

Maybe try your original recipe with some white mustard seeds?

Here is an interesting one that I found:

This recipe includes oil.  When I make hot wing sauce, I add butter, and it is amazing how much that cuts the heat.  So maybe that would work for the hotter mustards.  Also, the taste is supposed to mellow with time. ;)
