Is totally eliminating wheat the answer?

Hi, forgive me if this question has already been posted.  I looked but i could not find it anywhere.  I light of reading past books, Nourishing Traditions, In Defense of Food, many others and now Wheat Belly we have changed our diet.  We had become slack recently with eating lots more bread and consequently less vegetables.  So, I read Wheat Belly.  I thought it may be good for us to get "off" of bread and of course continue to keep our sugar consumption low.  Has anyone tried this?  Is there any difference between eating sprouted grain/soaked grain bread then normal whole wheat bread.  I used to soak all of my grains but not any more.  Any opinions? Advice?
