Whole Wheat Cake Recipes - Tried

Anyone got some tried and true whole wheat cake recipes?  I have hard red and hard white wheat.  Got 2 birthdays coming up and I'd hate to experiment on the birthday and have a flop. 

I don't care what flavor, but I'm really hoping only whole wheat flour.

BTW, I made the cocoa brownies I found on this site (another thread) with hard white and they were wonderful and I didn't change anything but the flour.

This was our favorite cake for birthdays growing up and I still like it. You can also make it in a 9x13 size pan.

The Ultimate Chocolate Cake

preheat oven to 350

Grease and flour two 9" layer pans.

Mix and set aside
2 cups whole wheat pastry flour
2/3 cup baking cocoa
1 1/4 teaspoon baking soda
1/4 teaspoon baking powder

In large bowl beat at high speed for 3 min. Or until light and fluffy.

1 2/3 cup sugar ( I use sucanut)
4 eggs
1 teaspoon vanilla

At low speed beat in
1 cup mayonnaise

Add flour mixture in 4 additions with

1 1/3 cup water

Begin and end with flour.

Pour into pans. Bake at 350 for 30-35 min. Cool in pans for 10 min. Remove and cool on racks.  Layer with Coconut pecan Frosting. Add whipping cream frosting for a super rich dessert.


Coconut Pecan Frosting

In 1 quart sauce pan, mix:

1 cup sugar (I use sucanut)
1 cup milk
1/2 cup butter
3 egg yokes
1 teaspoon vanilla

Cook over medium heat, stirring occasionally until thick, about 12 min.

Stir in 1 1/3 cup flaked coconut
1 cup chopped pecans

Beat until frosting is of spreading consistency

It looks great except we don't eat mayo.  Do we need to make a homemade mayo or can I sub regular fat for this?

I've always made mayo. I don't know if you could sub fat ???

Here is the cake I use when I want a healthy cake.

Mix together and set aside:
2 cup flour (I use whole wheat pastry flour but have used hard white wheat also)
1 1/2 tsp. baking soda
1/2 tsp. salt

Beat together: 1 cup honey
1/3 cup oil

Add: 4 bananas, mashed (2 cups)

Add: 1/4 cup water
1 tsp. vanilla

Add the flour mixture that you set aside.

Bake in 9", greased, floured pan at 350 degrees for 50 min.

I like to chop up nuts and sprinkle on the top before I cook. That way the cake has a "finished" look without the frosting. Usually, I whip some cream to put on top of each piece as I serve it.

To mix it, I use electric beaters.

If you want frosting, cream cheese type ones are nice.

Here is one that I adapted and used only WW flour and honey for the sweetener. I have made it for 3 birthdays now and everyone likes it. 

Chocolate Zucchini Cupcakes (but I'm sure you could make it into a cake too!)

1 1/2 c. WW flour
3/4 c. honey
1/4 c. unsweetened cocoa
1/2 tea. salt
1 1/2 tea. baking powder
1 c. shredded zucchini
3 Tbs. coconut oil
3 Tbs. applesauce or canned pumpkin
1/3 c. buttermilk or kefir
1 egg
2 tea. vanilla

Preheat oven to 350. Mix all in large bowl. Beat at high speed 1 minute. Pour into muffin cups.  Bake approx. 20 min. Makes 12 cupcakes.  This recipe can be doubled or tripled and has great results.

Looking at the recipe I would try using 5 eggs & probably 3/4-7/8 cup oil. That should equal about a cup of mayo. Add the extra egg with the others & beat in the oil when it calls for the mayo.

You might want to add 2-3 tsp of vinegar and a pinch of salt as well since those are in mayo.

I have made this cake with red wheat and it was good.  Tastes like chocolate cake and if you baked one with all purpose flour and one with whole wheat and ate them side by side - sure - you could tell which was whole grain.  But my crew ate it w/o complaint when I just made the one whole wheat.

A little secret I just learned that I LOVE is to substitute half of the flour (or more) with pecan flour! It makes the MOST DELICIOUS cakes and cookies!! It gives such a distinct and wonderful flavor to baked goods, and smells fantastic cooking. I don't bake anything without substiting some pecan flour because it is just so amazing. It is more expensive, but if you want a dessert that is not only WAY HEALTHIER, but will make people say WOW -- then try adding some pecan flour to your next recipe. I even used it successfully in a sugar cookie recipe and created the BEST cookie ever! It is my new favorite cookie now! Mouth watering! And the great thing is that I have been making most of these recipes with little to no sugar, just maple syrup as the sweetner.
 You can make pecan flour by buaaing them in a food processor until the natural oil makes them start to kinda clump and they are finely ground.

but alas dear daughter said she wanted PINK cake  ::) so we did some experimenting pre-birthday.  These did NOT turn out pink as we had hoped, but they were so good, dd said she didn't care.   ;D

2 1/2 cups hard red wheat flour
2 1/2 tsp baking powder
1/2 tsp salt
2/3 cup lard
1 1/2 cup sugar
1 1/2 tsp vanilla
2 eggs
1/4 cup plain yogurt
1 cup cherry Juicy Juice

Cream flour, salt, sugar and lard with fork or pastry cutter.  Add yogurt and juice.  Mix gently until all flour is wet.  Soak for one hour.  Add vanilla, baking powder and eggs.  Beat with mixer for a couple of minutes until smooth.  Spoon into cupcakes 1/2 full.  Bake @ 375o for 18 minutes.
