HB...I've made this one dozens of times, and it is GOOD! This recipe has been handed down in my family, and is the family favorite for Chocolate Cake. Popular during the Depression, the cake is called “Crazy” because it is made without eggs or milk…plus it foams when you add the vinegar to the baking soda. But it’s really, really moist and chocolatey (and you can’t taste the vinegar at all). It's not brownie like, and does rise like a regular cake.
Crazy CakeYields: one 9x13 (half recipe for a 9x9 pan)
3 c. flour
2 c. sugar
1 c. cocoa
2 t. salt
2 t. baking soda
2 T white vinegar
2 t. vanilla
Âľ c. oil (or 2/3 c. for layered cake)
1 c. cold coffee or water
Put ingredients in bowl in order listed, pouring water over all. Mix well. Pour into an ungreased 9x13 pan.
Bake at 350 for 30 minutes. Watch it closely and don’t overbake.
I like it with this frosting and fresh strawberries
The Best Cream Cheese Frosting/Filling:2 c. heavy whipping cream
16 oz. Cream cheese (2 packs)
1 1/2 c. brown sugar (packed)
2 t. vanilla extract
Combine cream cheese, brown sugar and vanilla in bowl of mixer (or large bowl). Beat until soft.
In another bowl, beat whipped cream to soft peaks, then fold or whisk into cream cheese mixture. Layer onto your favorite cake recipe.
