Here is the cake I use when I want a healthy cake.
Mix together and set aside:
2 cup flour (I use whole wheat pastry flour but have used hard white wheat also)
1 1/2 tsp. baking soda
1/2 tsp. salt
Beat together: 1 cup honey
1/3 cup oil
Add: 4 bananas, mashed (2 cups)
Add: 1/4 cup water
1 tsp. vanilla
Add the flour mixture that you set aside.
Bake in 9", greased, floured pan at 350 degrees for 50 min.
I like to chop up nuts and sprinkle on the top before I cook. That way the cake has a "finished" look without the frosting. Usually, I whip some cream to put on top of each piece as I serve it.
To mix it, I use electric beaters.
If you want frosting, cream cheese type ones are nice.
