I'm a little new here...so maybe this topic has been posted before.
I'm in need of some new ideas for breakfast. Oatmeal, and cream of wheat gets old even when you're a cream of wheat fan. I do muffins also and occasionally eggs and toast. ...any simple to fix breakfast ideas? My boys also seem to be getting to the bottomless pit age. I feed them and feed them and can't seem to fill them up!

We like hot cereal.

I start with 2 cups oatmeal, millet, or other rolled grain, and put it in my pot for morning.
I set a pitcher with 4 cups water on top of it.

In the morning, I add the water and then as much of the following healthy additions as I have time or taste for-

Fresh or Frozen fruit (Blueberies, peaches ect.)
Wheat bran
Ground flax (Pre ground and stored in the freezer)
Coconut oil and or red palm oil
Liquid cloraphyl
Dates or raisins
Cinnamon, cloves, nutmeg.
Nettle powder, bee pollen, rose hip powder.

Can also add yogurt or a little kerfir
Honey to sweeten if desired.

To keep it easy-
I have premixed dry ingredients, in potion sized zip locks (For after birth of a baby)
I have mixed it bulk in a 5 gallon pail.
I have mixed smaller dry ingredients in a jar and kept in the fridge.

Oatmeal Pancakes

1/2 cup unbleached flour
1/2 whole wheat flour
1 cup oats
1/2 T baking powder
1/2 t aluminum free baking soda
1/2 t salt

Mix dry ingredients together

mix in 1/4 cup (1/2 stick) butter softened
1 egg (sometimes I use two)
1 1/2 cup milk
1/4 cup kefir (or eliminate keifr and use 1 3/4 cup milk)

Mix all ingredients together and pour "puddles" onto  a lightly greased griddle or cast iron skillet. The butter can make them burn easier than normal pancakes so be cautioned,,,,many a smoke alarms have been set off here Embarrassed Smiley

TIP: It does help to make batter for a while (10 min.) so it will get thicker, but it is not nec.

We eat a lot of quick foods for breakfast.  For us, many options or many ingredients make for slow start to the day and we drag till 10.  There are usuall 3 things that hit the table for breakfast:   

Toast and Spreads - require them to have peanut butter with the option of anything else they want added on to hold the bigger guys for longer than anything else.  Serve on napkins with juice and you have nearly no dishes.

Oatmeal - We like ours really thick (6 c water and 6 c oats with another cup oats stirred in for crunch before serving)  I also have done the "must have peanut butter - other is optional" for stirring in on this one - again to hold those boys a little longer. (maybe even til the dishes are cleared?)

And our wacky favorite, Banana bread.  Our kids go through lots of bananas and sometimes I over buy.  So the extras get converted to loaves for the freezer.  I use my own flour, molasses, nuts and  .... shhhh.... chocolate chips... to make it heartier
for the boys.  I do 3 loaves at a time instead of trying to make muffins from it to reduce kitchen time and messy dishes.

These loaves of bread from the freezer have saved me tons of AM time over & over.

I NEED that heartier, healthy recipe for banana bread!  We love it here too and go through lots of bananas - in fact I have three in my freezer right now waiting for a healthier recipe for banana bread than what I have!!  What a great idea to have it for breakfast!!

Something Similar to The Banana Bread I Make
(Measurements are approximate)
1/2 c brown sugar/raw sugar
1/4 c molasses
1/2 c shortening/butter mix

mix all & add

1 egg

mix & add

1/2 c sour milk (1 glug vinegar plus milk to make 1/2 c - let sit a bit)

mix & add

2c wh. wheat flour
1t baking soda
1t salt (optional -  I omit when I'm pregnant)

1/2 c nuts & choco chips

2-3 mashed bananas

350 degrees 60-75 min in greased/floured pan.  let sit 5 min before removing from pan

I make banana bread in batches of 3 loaves, don't measure much and get interrupted often - so this is my best guess.  They will be much denser than white flour/white sugar loaves & I decided to name them 'Chocolate chip banana bread' to highlight the few chips instead of the fact that the thick slices were pretty heafty (I have one boy who examines his food before he eats while the others pretty much just eat & eat.) 

You sound familiar with quick breads like this, so you will be looking for the same sort of 'look' to the batter.  The liquid sweetner asks for more flour than the original white sugar.

And I always remember that " I was gonna do this all butter!" after I have already measured some of the shortening for my 3x batch so mine is usually part/all shortening.  Gotta make a note on that lid so I remember to do something else.

Anyone got a 'real' recipe for someone who likes predictable outcomes or just just learning?  I'm afraid the results in my kitchen are 'once in a lifetime experiences.'

I don't really like bananas and therefore as a rule do not like banana bread, but I found a recipe that is so moist, I can't help but scarf it hot from the oven with butter drizzled over it.  Since we are sharing banana bread recipes, I figured I would share mine.

3-4 over-ripe bananas, mashed
1 cup sugar
1 egg
1/3 cup soft butter (I use olive oil or lard)
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla
1/2 cup chopped nuts (I don't like nuts in mine, so I leave them out)

   1. In a large bowl mash your bananas until they are very pasty.
   2. Add all other ingredients.
   3. Mix well.
   4. Pour all ingredients into a greased loaf pan.
   5. Bake at 350 degrees for 50-60 minutes or until a toothpick inserted into the middle of the pan comes out clean.

Thanks HB - I was wishin' you would have one to add.  I hate my shortening and wanna have a tested recipe to... uh.. well, have sitting around for me to not relly follow but kindof refer to.  Looks like the flour/sweetener/fat ratio is similar to mine so I should be able to sub out the shortening pretty easy.  And oil really works?  I'll have to try it but my experience with substituting fats with different melting points has not been all that tasty/eye appealing.

Breakfast Burritos for Saturday morning  Smiley Smiley Smiley

First: grate potatoes and fry hashbrowns in skillet with butter. I make two skillets full.

Meanwhile:
Brown ground beef with
Chili powder
Paprika
garlic salt
Salt and Pepper
Cayenne OR Chopped Green Chili (local favorite)

Prepare scrambled eggs

Warm tortillas in foil in oven

Make orange juice

Grate cheese

Remove finished hashbrowns from skillet #1 to skillet #2 ontop of hashbrowns to stay warm while you scramble the eggs in skillet #1.

Assemble burritos at the table by layering hashbrowns, meat, eggs, and cheese in tortilla, wrap and eat while hot.

This is an all-time favorite family tradition!

  Can anyone say....CHORIZO?!?! mmmmm good-as long as you get the good stuff and not the chorizo with lips and lymphnodes and such Tongue
  Chorizo con papas y huevos....mmmmmmmmmmm
     Find good Chorizo at the store -(i'm talkin the ground stuff not the chorice sausage links)
     Dice your papas (potatos) and boil till tender.
     fry in pan with grease of your choice
     ad chorizo and fry till cooked
     drop 3-4 eggs in hot pan and scramble all together with chorizo and papas.
     serve with warm tortillas(tortillas are used for potholders, utensils as well as napkins-sometimes plates also)

My family likes the chorizo y huevos cooked separate from the papas and we top with queso (cheddar cheese) and a little sour cream (is that jojoqui?)  We also use El Pato sauce for those who want more heat and tomato flavor without more strong, destinctive churizo flavor.

We use about 6 oz. churizo to a dozen eggs and find this is the most acceptable mix for gringos.

My family makes a dish similar to this, we add the peaches bofore we cook it, or sometimes blueberries. Just be careful w/ thBB. We used to eat this on sunday morning and then our very large family would show up for church w/ bluish purple lips and tongue!!!

For those addicted to sugary cereal, I've heard a good way to wean them off of it is to mix some of the sugar cereal with a healthier cereal, and slowly decrease the amount of sugary cereal over time.

So, they don't like oatmeal - but what about a "topping buffet"?  Our young kids got their bowl of oatmeal (amount assigned by Mom) and then could start topping from the options (limits set by Mom too).

real peanut butter
jam/jelly
fresh fruit
yogurt
milk
real Whipped Cream (?!?)
cinnamon
maple syrup
brown sugar
honey
raisens
applesauce (our girls' favorite)

Even us grownups like to pick our favorite combos...  I don't recommend choco chips/syrup, white sugar, etc since you are probably trying to avoid that from sugar loaded cereal before.

chopped up dried apples (put in before you cook the oatmeal), some apple butter, cinnamon, nutmeg and a sprinkle of brown sugar.  Yum!   Wink

This summer, we had fruit & yogurt fairly often. We got lots of peaches from a local orchard, so this helped use up the 10 lbs. I just started trowing in whatever I had at the time.

I cut up:

fresh peaches
bananas
strawberries (fresh, or frozen that I thawed out first)
blueberries (if I had any)

Top with yogurt & a mixture of crunchy stuff that I had, usually something like this:

sunflower seeds
pumpkin seeds
ground flax seed
wheat germ
rolled oats
coconut oil
maple syrup

Hi ladies! I just wanted to share a recipe for healthy breakfast muffins. My kids will eat a couple at breakfast with honey or butter on top!!! I like to double the recipe to freeze and then just heat them up in the morning.

2 cups of whole wheat flour
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
1/2 cup nuts
1 cup raisins
2 eggs
1/4 cup orange juice
1 tsp. orange peel (you could actually put the whole orange in the blender with some peel left on it!) works well!
1 cup shredded carrots
1 tsp. vanilla
1/2 cup honey
1/2 cup oil or butter

Mix dry ingredients first, then add all wet.

Bake 375 for 20-25 minutes. Hope you enjoy Grin

We had Dutch Cream Waffles the other morning and they super fantastic.  Not terribly sweet.  I'll post the recipe soon.  Have to go find it.


PS - So, I've gone to all 'grind my own flour' and have a question...If a recipe calls for 'all purpose flour' do I substitute soft white for this?  thanks

We usually do something hearty for breakfast, like eggs, pancakes and sausage. My kids seem to do better with protein for breakfast as opposed to cold cereal.

Other fav breakfasts here are:
~Hot rice with raisins, cream, cinnamon and sugar
~Fruit smoothies (OJ in blender w/frozen fruit, vanilla yogurt and I hide acidophilus/bifidus in there, too)
~Biscuits and gravy (very rare, but a TOTAL hit)
~#1 All-Time Request: Breakfast Sandwiches: toasted english muffins, fried egg, sausage and cheese all dipped in real maple syrup.

This is our best banana bread recipe. I admit that sometimes, banana bread can get really boring...This recipe is from my SIL, and it's great! I can't keep the stuff around--it goes so fast:

Banana Energy Bread
1 c. sugar (could sub out for honey)
2 eggs
1tsp. vanilla
1/2 c. butter
1/3 c. milk
Mix all this well, then add 4 mashed bananas. Then add:
1 1/3 c. flour
1/3 c. flaxmeal
1 tsp. soda
1/4 tsp. baking powder
dash salt

Bake in small loaves (4"X6"?) for 45 minutes at 350. Makes 4 small pans. I use the mini loaf pans and get 7 little loaves. Only bakes for 35 min or so.

The only downfall to the above recipe is that it is best baked in small pans. Doesn't seem to bake thoroughly in larger pans. SarahK, you will probably need to triple this recipe, and I don't know if you'll have enough small pans.  Grin

Keepitsimple~ I'm not sure about the flour. I was wondering if all-purpose flour rises differently then whole wheat. This is proabably a dumb question, but last night I made a new whole wheat loaf of bread it called for a cup of the whole wheat and all-purpose, I sub the all purpose for another cup of whole wheat and it seemed to come out a much smaller loaf then what it was supposed to be. Also what all-purpose flour is okay to use? Maybe I should just stick to my recipe  Tongue

I don't know about "all-purpose" vs fresh ground whole wheat --  but for those new to grinding, what I have found - through process of elimination and MANY sunken loaves of bread... Roll Eyes is that you MUST use hard wheat (red or white) for yeast breads, pizza dough, etc...  Then the soft white wheat is for muffins and other softer and lighter breads.  I don't find much difference however, using hard for muffins, pancakes, etc...but you can not use soft for loaf bread!!  Spelt can be used for muffins, pancakes, banana bread - but I can not bake loaf bread with spelt, it sinks every time.  Just a couple of tips if you are new to grinding and baking.

I've heard people will use the unbleached all purpose (which is what we used before I switched), but what did they use before this was available??  I was thinking the soft white could be used in lieu of the all-purpose, but I'm not sure.

One of my favorites - French toast! And it's so easy.
For our family of five, we take a loaf of bread that's a little on the stale side and slice it medium thickness. Lightly whip one or two egss in a shallow dish and add about 4(?) cups of milk, 1/2 c. sugar, cinnamon and a little vanilla. Mix really well. (I've also added nutmeg or orange peel to batter) Dip bread in batter and brown both sides on hot, buttered skillet. We top the French toast with butter or PB and jam or syrup or applesauce and sometimes fresh fruit like bananas and strawberries. Sausage links are really good on the side, or other favorite bkfst meat. This "recipe" is easy to adjust to preferences and serving size, and the leftovers freeze well. You can pop a slice in the toaster straight from the freezer and it's almost just as good. That makes it convenient  for busy school mornings.
